# How to Make It:

01 - Heat olive oil in a large Dutch oven or soup pot over medium heat. Add onion and sauté for 3–4 minutes until translucent.

03 - Add turmeric, cumin, smoked paprika, thyme, and black pepper. Cook for 1 minute until fragrant.
04 - Add barley and lentils. Stir to coat with the vegetables and spices.
05 - Pour in vegetable broth and diced tomatoes (with juice). Add bay leaf and salt.
06 - Bring to a boil, then reduce heat to low, cover partially, and simmer for 35–40 minutes, stirring occasionally, until barley and lentils are tender.
07 - Remove bay leaf. Stir in kale or spinach and cook for another 2–3 minutes until wilted.
