03 - Cover bowl and refrigerate for at least 4 hours or overnight. Stir once after 30 minutes to prevent chia seeds from clumping together.
04 - After chilling, stir pudding again. If texture is too thick, add a splash of milk to reach desired consistency.
05 - Gently fold in chopped walnuts or pecans, raisins, and shredded coconut until evenly distributed.
06 - Divide pudding into serving glasses or bowls. Top with extra grated carrot, nuts, coconut, Greek yogurt, or whipped cream as desired.
