# How to Make It:

01 - Preheat oven to 425°F.
02 - Toss zucchini, bell pepper, cherry tomatoes, and red onion with olive oil, salt, and pepper until evenly coated. Spread vegetables in a single layer on a baking sheet. Roast for 20-25 minutes, stirring halfway through, until tender and lightly browned.
03 - Bring 2 cups of water and 1/2 teaspoon salt to a boil in a medium saucepan. Add rinsed millet, reduce heat to low, cover tightly, and simmer for 15 minutes until water is absorbed. Remove from heat and let stand, covered, for 10 minutes. Fluff with a fork before serving.
04 - In a small bowl, whisk together orange juice, lemon juice, orange zest, honey or maple syrup, and Dijon mustard until combined. Slowly drizzle in extra-virgin olive oil while whisking continuously to emulsify. Stir in chopped parsley and mint. Season with salt and pepper to taste.
05 - Divide cooked millet evenly among four bowls. Arrange roasted vegetables on top of the millet. Drizzle generously with citrus herb dressing.
06 - Top each bowl with crumbled feta cheese (if using), toasted pumpkin seeds, and additional fresh herbs. Serve warm or at room temperature.
