# How to Make It:

01 - Combine quinoa and water in a medium saucepan. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes until water is absorbed. Fluff with a fork and let cool slightly.
02 - Place chopped kale in a large bowl. Drizzle with 1 teaspoon olive oil and a pinch of salt. Massage with hands for 1-2 minutes until leaves become tender and dark green.
03 - Whisk together olive oil, lemon juice, orange juice, honey or maple syrup, minced garlic, salt, and pepper in a small bowl until emulsified.
