01 - Combine pitted medjool dates and raw almonds in a food processor. Pulse until the mixture is finely chopped and forms a sticky consistency.
02 - Add unsweetened shredded coconut, chia seeds, cocoa powder, melted coconut oil, vanilla extract, and sea salt to the processor. Blend until the mixture is well combined and holds together when pressed.
03 - Scoop out heaping tablespoons of the mixture and roll between your palms to form compact balls.
04 - If coating is desired, roll each ball in additional unsweetened shredded coconut until evenly coated.
05 - Arrange the balls on a parchment-lined tray and refrigerate for at least 30 minutes to set.
06 - Transfer into an airtight container and keep refrigerated; enjoy within one week.
