- In a large mixing bowl, whisk together the almond meal, shredded coconut, cocoa powder, chia seeds, and sea salt until evenly distributed.
- Pour in the maple syrup, melted coconut oil, and vanilla extract. Stir thoroughly until a sticky, cohesive dough forms and all dry ingredients are fully moistened.
- If the mixture feels too dry and crumbly, add 1 to 2 teaspoons of water. If too wet and sticky, sprinkle in a small amount of additional almond meal until the dough holds together when pressed.
- Using your hands, scoop approximately 1 tablespoon of dough and roll firmly into 1-inch balls. Place each formed ball onto a plate or lined tray.
- Optionally, roll each ball in extra shredded coconut, pressing gently to adhere the coating evenly across the surface.
- Arrange all the balls on a plate or tray and refrigerate for at least 30 minutes to allow them to firm up and the flavors to meld.
- Transfer the chilled balls to an airtight container and store in the refrigerator for up to 1 week.
