- Preheat the oven to 400°F. Line a baking sheet with parchment paper.
- Pat the chickpeas thoroughly dry with a clean kitchen towel to ensure maximum crispiness during baking.
- In a large mixing bowl, combine the olive oil, chili powder, smoked paprika, ground cumin, garlic powder, onion powder, sea salt, lime zest, lime juice, and maple syrup if using. Whisk until a smooth paste forms.
- Add the drained chickpeas to the seasoning mixture and toss vigorously until every chickpea is evenly coated.
- Sprinkle the chickpea flour over the seasoned chickpeas and toss again until the chickpeas begin sticking together and small clusters form.
- Spoon small clumps of the coated chickpeas onto the prepared baking sheet, spacing them about 1 inch apart to allow proper air circulation for even crisping.
- Bake for 25 to 30 minutes, flipping the clusters halfway through, until they are golden brown and crisp on the outside.
- Let the clusters cool completely on the baking sheet. They will continue to crisp up as they cool. Serve as a snack or use as a salad or soup topper.
