01 - Cut the pressed tofu into 3/4 inch cubes.
02 - In a medium bowl, toss tofu cubes gently with cornstarch, salt, and pepper until evenly coated.
03 - Heat vegetable oil in a large nonstick skillet over medium-high heat. Add tofu cubes in a single layer. Fry, turning occasionally, until golden and crispy on all sides, about 12–15 minutes. Remove from skillet and set aside on a plate lined with paper towels.
04 - In a small bowl, whisk together soy sauce, lime juice, maple syrup, chili paste, lime zest, minced garlic, and sesame oil to make the sauce.
05 - Wipe out the skillet, lower heat to medium, and pour in the sauce. Let simmer for 1–2 minutes until slightly thickened.
06 - Return the crispy tofu to the skillet and toss gently to coat all pieces in the sauce. Cook for 2 more minutes, stirring to ensure even glazing.
07 - Transfer the tofu bites to a serving dish. Garnish with cilantro, green onions, and lime wedges. Serve immediately.
