Dark Chocolate Coconut Chia Delight (Printable Version)

Creamy coconut chia pudding topped with rich melted dark chocolate and toasted coconut flakes.

# Ingredient List:

→ Chia Pudding Base

01 - 1 can (13.5 oz) full-fat coconut milk
02 - 4 tbsp chia seeds
03 - 2 tbsp pure maple syrup
04 - 1 tsp vanilla extract

→ Chocolate Layer

05 - 80 g (2.8 oz) dark chocolate (70% cocoa or higher), chopped
06 - 2 tbsp coconut milk

→ Toppings

07 - 2 tbsp toasted coconut flakes
08 - 1 tbsp cacao nibs (optional)
09 - Fresh berries (optional)

# How to Make It:

01 - Whisk together coconut milk, chia seeds, maple syrup, and vanilla extract in a bowl until completely combined and no clumps remain.
02 - Cover the bowl and refrigerate for at least 2 hours, stirring once after 30 minutes to prevent the seeds from clumping, until the mixture achieves a thick, pudding-like consistency.
03 - Just before serving, combine chopped dark chocolate and 2 tbsp coconut milk in a heatproof bowl placed over a pan of simmering water. Stir continuously until the chocolate is fully melted and the mixture becomes smooth and glossy.
04 - Spoon the thickened chia pudding evenly into four serving glasses or bowls, creating a smooth surface layer.
05 - Pour the melted chocolate mixture over each portioned pudding, tilting the glasses gently to create an even top layer. Allow to set for 1-2 minutes at room temperature.
06 - Sprinkle toasted coconut flakes, cacao nibs, and fresh berries over the chocolate layer as desired. Serve immediately or return to the refrigerator until ready to serve.
