01 - In a medium saucepan, combine orange juice, water, brown sugar or honey, cinnamon stick, lemon peel, and salt. Bring to a gentle simmer over medium heat, stirring constantly until the sweetener completely dissolves.
02 - Add halved figs to the saucepan. Reduce heat to low, cover, and simmer for 15 minutes, stirring occasionally to ensure even cooking.
03 - Remove the lid and stir in chopped walnuts. Continue simmering uncovered for 8 to 10 minutes until figs are tender and the liquid has reduced to a syrup-like consistency.
04 - Remove from heat. Discard the cinnamon stick and lemon peel strip. Stir in vanilla extract until fully incorporated.
05 - Let compote cool to room temperature before storing. Serve warm over Greek yogurt, pancakes, or oatmeal, or chilled alongside cheese platters.
