# Expert Advice:

01 -
  • The oat crust creates this incredible crispy chewy texture that makes tofu feel like a real main dish
  • The ginger lime marinade cuts through everything with brightness while the maple syrup balances it perfectly
02 -
  • The pressing step is what makes restaurant quality tofu at home, I use a tofu press but wrapping it in towels and setting something heavy on it for 20 minutes works perfectly
  • The oat crust will get soggy if you marinate the tofu after applying it, so always marinate first and crust right before baking
03 -
  • For extra crispy oat topping, run the baked tofu under the broiler for 1 to 2 minutes at the end, watching closely so it doesn't burn
  • If you're gluten free, use tamari instead of soy sauce and certified gluten free oats, and the recipe works perfectly
