16 - 1/2 teaspoon salt
17 - 1/4 teaspoon black pepper
18 - 3 tablespoons olive oil or melted plant-based butter

# How to Make It:

01 - Preheat the oven to 375°F.
02 - Heat 2 tablespoons olive oil in a large ovenproof skillet or Dutch oven over medium heat. Add onion and sauté for 3 minutes until translucent.
03 - Stir in garlic, ginger, and carrot; cook for another 2 minutes until fragrant.
04 - Add cabbage wedges and sprinkle with coriander and smoked paprika. Season with salt and pepper.
05 - Pour in the vegetable broth and apple cider vinegar. Bring to a gentle simmer, cover, and braise in the oven for 30 minutes.
06 - Meanwhile, prepare the oat topping: In a bowl, combine oats, flour, sunflower seeds if using, thyme, salt, and pepper. Drizzle in olive oil and mix until crumbly.
07 - Remove the cabbage from the oven. Uncover and evenly scatter the oat topping over the cabbage.
08 - Return to the oven, uncovered, and bake for another 20 minutes, or until the topping is golden and crisp.
09 - Let rest for 5 minutes before serving.

# Expert Advice:

01 -
  • The way the cabbage turns silky soft while that topping stays perfectly crunchy creates this incredible texture contrast
  • Its one of those dishes that tastes even better the next day, making it perfect for meal prep or lazy leftovers
02 -
  • Don't rush the initial braising step, that time in the covered oven is what transforms the cabbage from crunchy to meltingly tender
  • The oat topping should clump together when you squeeze it, if it's too dry add another splash of oil
03 -
  • Cut your cabbage wedges thick enough that they don't fall apart during braising but thin enough to become tender throughout
  • Toast the sunflower seeds in a dry pan before adding them to the topping for an extra layer of flavor
