# Expert Advice:

01 -
  • The glaze transforms from simple paste into sticky, caramelized magic in minutes
  • Perfect for those nights when you want restaurant food without the restaurant effort
02 -
  • Watch the broiler like a hawk, because that sugar in the glaze goes from perfect caramelized to burnt in about 30 seconds
  • Patting the salmon completely dry is the difference between glaze that sticks and glaze that slides right off into a puddle
03 -
  • Room temperature salmon cooks more evenly, so take it out 20 minutes before you start cooking
  • If your glaze seems too thick, add water one teaspoon at a time until it is brushable but not runny
