01 - Preheat oven to 425°F. Line baking sheet with parchment paper.
02 - Whisk olive oil, harissa paste, maple syrup, cumin, smoked paprika, salt, and pepper in large bowl.
03 - Add carrots to bowl. Toss until evenly coated with spice mixture.
04 - Spread carrots in single layer on prepared baking sheet.
05 - Roast 25-30 minutes, turning once halfway through, until tender and edges are caramelized.
06 - Transfer to platter. Sprinkle cilantro or parsley and toasted seeds or nuts. Serve with lemon wedges.
