01 - 1 lb carrots, peeled and cut into sticks or thick slices

03 - 1 ½ tbsp harissa paste
04 - 1 tbsp honey or maple syrup
05 - 1 tsp ground cumin
06 - ½ tsp ground coriander
07 - ½ tsp smoked paprika
08 - ½ tsp sea salt
09 - ¼ tsp freshly ground black pepper

10 - 2 tbsp chopped fresh cilantro or parsley
11 - 2 tbsp toasted sesame seeds or chopped pistachios
12 - 1 small lemon, cut into wedges

# How to Make It:

01 - Preheat the oven to 425°F. Line a baking sheet with parchment paper.
02 - In a large bowl, whisk together olive oil, harissa paste, honey, cumin, coriander, paprika, salt, and black pepper until smooth.
03 - Add the carrot sticks to the bowl and toss until evenly coated with the marinade.
04 - Spread the carrots in a single layer on the prepared baking sheet.
05 - Roast for 25 to 30 minutes, turning once halfway through, until the carrots are tender and slightly caramelized at the edges.
06 - Transfer to a serving platter. Sprinkle with fresh herbs and sesame seeds or pistachios. Serve with lemon wedges on the side.
