01 - Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil.
02 - Pat the cod fillets dry with paper towels and place them on the prepared baking sheet.
03 - In a small bowl, whisk together the olive oil, lemon zest, lemon juice, black pepper, salt, garlic powder, and paprika (if using).
04 - Brush the mixture evenly over both sides of the cod fillets.
05 - Bake in the preheated oven for 12–15 minutes, or until the cod is opaque and flakes easily with a fork.
06 - Remove from the oven, garnish with chopped parsley, and serve with lemon wedges.
