01 - In a small bowl, whisk together olive oil, lemon juice, lemon zest, thyme, garlic, salt, and pepper to make the marinade.
02 - Pat salmon fillets dry with paper towels. Place them in a shallow dish or resealable bag.
03 - Pour the marinade over the salmon, turning to coat evenly. Let marinate for 10–15 minutes at room temperature.
04 - Preheat the grill to medium-high heat (about 400°F). Oil the grates to prevent sticking.
05 - Place salmon fillets skin-side down (if skin-on) on the grill. Grill for 4–6 minutes per side, depending on thickness, until the salmon is opaque and flakes easily with a fork.
06 - Remove from grill. Rest for 2 minutes. Serve with lemon wedges and extra thyme if desired.
