01 - 1.5 lbs assorted carrots, peeled and cut into 2-inch sticks

02 - 2 tbsp white miso paste
03 - 2 tbsp pure maple syrup
04 - 2 tbsp extra-virgin olive oil
05 - 1 tbsp rice vinegar
06 - 1 tsp soy sauce
07 - 1/2 tsp freshly ground black pepper

# How to Make It:

01 - Preheat the oven to 425°F. Line a large baking sheet with parchment paper.
02 - In a large bowl, whisk together white miso, maple syrup, olive oil, rice vinegar, soy sauce, and black pepper until smooth.
03 - Add the carrot sticks to the bowl and toss well to evenly coat with the glaze.
04 - Spread the carrots in a single layer on the prepared baking sheet.
05 - Roast for 25–30 minutes, turning once halfway, until carrots are caramelized and tender at the edges.
06 - Transfer to a serving platter. Sprinkle with toasted sesame seeds and chopped parsley or cilantro, if desired. Serve warm.
