01 - In a medium bowl, combine 1 cup rolled oats, milk, Greek yogurt, chia seeds, honey, vanilla extract, and salt. Mix well.
02 - Divide the mixture evenly between two jars or bowls.
03 - Cover and refrigerate overnight (or at least 6 hours) to allow the oats to soften and absorb the liquid.
04 - The next morning, give the oats a good stir.
05 - Top each serving with extra rolled oats, fresh fruit, chopped nuts, and shredded coconut if desired. Drizzle with a little more honey or maple syrup if you like.
06 - Serve chilled.
