01 - Preheat the oven to 400°F.
02 - Toss the diced golden beet with olive oil, thyme, and a pinch of salt. Spread on a baking sheet lined with parchment paper.
03 - Roast the beets for 25–30 minutes, or until tender and caramelized. Let cool slightly.
04 - In a blender, combine roasted beets, pears, ginger, almond milk, lemon juice, maple syrup if using, and ice cubes. Blend until smooth and creamy.
05 - Taste and adjust sweetness if needed. Pour into glasses and serve immediately.
