01 - Preheat oven to 425°F. Line a baking sheet with parchment paper.
02 - In a large bowl, toss baby carrots with olive oil, salt, and pepper until evenly coated.
03 - Spread carrots in a single layer on the prepared baking sheet. Roast for 20 minutes, stirring halfway through.
04 - Meanwhile, in a small bowl, whisk together orange juice, lemon juice, honey (or maple syrup), and orange zest.
05 - After 20 minutes, remove carrots from the oven. Drizzle with the citrus glaze and toss to coat.
06 - Return carrots to the oven and roast for an additional 5 minutes, or until glaze is bubbling and carrots are caramelized and tender.
07 - Transfer to a serving platter. Garnish with chopped parsley and extra orange zest if desired. Serve warm.
