01 - Preheat the oven to 425°F. Line a baking sheet with parchment paper.
02 - Arrange the carrots in a single layer on the prepared baking sheet. Drizzle with olive oil, sprinkle with salt and black pepper, and toss to coat evenly.
03 - Roast the carrots in the oven for 25–30 minutes, turning once halfway through, until golden and tender.
04 - While the carrots are roasting, mix honey, ground cumin, and ground coriander in a small bowl.
05 - Remove the carrots from the oven and immediately drizzle with the cumin honey mixture. Toss gently to coat.
06 - Transfer to a serving platter and garnish with fresh parsley and toasted sesame seeds or pistachios. Serve warm.
