01 - Preheat oven to 425°F. Line a baking sheet with parchment paper.
02 - Arrange carrots on the prepared baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and toss to coat evenly.
03 - Roast for 25–30 minutes, turning once halfway through, until carrots are tender and caramelized at edges.
04 - Whisk together tahini, lemon juice, maple syrup, water, garlic, and a pinch of salt in a small bowl. Add more water, one teaspoon at a time, until smooth and pourable.
05 - Arrange roasted carrots on a serving platter. Drizzle generously with tahini sauce.
06 - Sprinkle with parsley, toasted sesame seeds, and lemon zest. Serve warm or at room temperature.
