03 - Add the oats, shredded cheddar, crumbled feta, salt, pepper, dried thyme, and smoked paprika to the egg mixture. Stir thoroughly to distribute all ingredients evenly.
04 - Gently fold in the cherry tomatoes, chopped spinach, diced bell pepper, red onion, fresh parsley, and fresh chives until evenly distributed throughout the mixture.
05 - Pour the oat mixture into the prepared baking dish or divide evenly among individual oven-proof bowls.
06 - Drizzle the top with olive oil if desired for additional richness and a golden finish.
07 - Bake for 30–35 minutes, or until the oats are fully set and the top is lightly golden brown.
08 - Allow the baked oats to cool for 5 minutes before serving. Garnish with additional fresh herbs or microgreens if desired.
