Tender cod fillets with sweet-savory sesame-ginger glaze, broiled until perfectly caramelized

# Ingredient List:

→ Fish

01 - 4 cod fillets (about 6 oz each), skinless and boneless

→ Marinade & Glaze

02 - 3 tablespoons low-sodium soy sauce
03 - 2 tablespoons honey
04 - 1 tablespoon toasted sesame oil
05 - 1 tablespoon freshly grated ginger
06 - 2 cloves garlic, minced
07 - 1 tablespoon rice vinegar
08 - 1 teaspoon Sriracha or chili garlic sauce (optional)
09 - 1 tablespoon water
10 - 1 teaspoon cornstarch

→ Garnish

11 - 1 tablespoon toasted sesame seeds
12 - 2 green onions, thinly sliced
13 - Lime wedges (optional)

# How to Make It:

01 - Whisk together soy sauce, honey, sesame oil, ginger, garlic, rice vinegar, and Sriracha in a small bowl until well combined.
02 - Place cod fillets in a shallow dish. Reserve 2 tablespoons of marinade for glazing. Pour remaining marinade over fish and let sit for 10-15 minutes.
03 - Set oven broiler to high heat. Line a baking sheet with foil and lightly oil the surface.
04 - Combine reserved marinade with water and cornstarch in a small saucepan. Whisk until smooth, then heat over medium-low heat for 1-2 minutes until thickened.
05 - Remove cod from marinade and place on prepared baking sheet. Brush thickened glaze evenly over each fillet.
06 - Broil for 8-12 minutes until fish is opaque and flakes easily. Brush with additional glaze halfway through cooking.
07 - Transfer cod to serving plates. Sprinkle with toasted sesame seeds and sliced green onions. Accompany with lime wedges if desired.

# Expert Advice:

01 -
  • The glaze creates this gorgeous sticky finish that makes you look like a pro chef
  • Everything comes together in under 30 minutes with ingredients you probably already have
  • Its the perfect balance of sweet and savory that even fish skeptics seem to love
02 -
  • Watch the broiler like a hawk during the last few minutes because the honey in the glaze can go from perfect to burned in seconds
  • Letting the fish marinate longer than 15 minutes can make it too salty, thanks to the soy sauce
  • If your glaze gets too thick while reducing, add a teaspoon of water to thin it back down
03 -
  • Pat the cod completely dry before marinating so the glaze actually sticks instead of sliding right off
  • Use a silicone brush for applying the glaze, it handles the heat better than natural bristles
