# Ingredient List:

→ Vegetables

01 - 1 large bunch curly kale, stems removed, leaves roughly chopped
02 - 1 small yellow onion, finely sliced
03 - 2 cloves garlic, minced

→ Seasoning & Sauce

04 - 1 ½ tbsp white miso paste
05 - 2 tbsp water
06 - 1 tbsp olive oil
07 - ½ tsp smoked paprika
08 - ½ tsp chili flakes
09 - Freshly ground black pepper, to taste
10 - Salt, to taste

→ Garnish

11 - 1 tsp sesame seeds
12 - 1 tsp toasted sesame oil

# How to Make It:

01 - Whisk together miso paste and 2 tbsp water in a small bowl until completely smooth. Set aside for later use.
02 - Heat olive oil in a large skillet over medium heat. Add sliced onion and sauté for 2 minutes until softened and translucent.
03 - Add minced garlic and smoked paprika to the skillet. Cook for 30 seconds, stirring constantly to prevent garlic from burning.
04 - Increase heat to medium-high. Add chopped kale in batches, tossing continuously to wilt and accommodate all leaves. Sauté for 3–4 minutes until kale is tender yet remains vibrant green.
05 - Pour the prepared miso mixture over the kale. Toss thoroughly to coat leaves evenly. Continue cooking for 1–2 minutes to allow flavors to meld together.
06 - Season with chili flakes, black pepper, and additional salt if desired. Remove from heat immediately.
07 - Drizzle with toasted sesame oil and sprinkle sesame seeds evenly over the dish before serving.

# Expert Advice:

01 -
  • The umami punch from miso transforms kale from boring to addictive in minutes
  • Its ready in under 20 minutes but tastes like it simmered for hours
02 -
  • Miso varies in saltiness between brands, so always taste before adding extra salt to the final dish
  • The kale keeps cooking in the pan even after you turn off the heat, so pull it slightly earlier than you think
03 -
  • Use a large pan, overcrowding makes the kale steam instead of sauté properly
  • Room temperature miso whiskes more smoothly than cold from the fridge
