01 - Preheat the oven to 425°F. Line a large baking sheet with parchment paper.
02 - In a large bowl, combine all mushrooms, red onion, and garlic.
03 - Drizzle with olive oil, then sprinkle with smoked paprika, cumin, black pepper, salt, and cayenne. Toss until evenly coated.
04 - Spread the mixture in a single layer on the prepared baking sheet.
05 - Roast for 25-30 minutes, stirring halfway through, until mushrooms are golden, tender, and slightly crisp at the edges.
06 - Remove from the oven. Immediately toss with parsley, thyme, lemon zest, and lemon juice.
07 - Serve hot or warm as a side dish or atop grains.
