03 - Drizzle vegetables with olive oil. Add cumin, coriander, turmeric, smoked paprika, black pepper, salt, and cayenne pepper. Toss until evenly coated.
04 - Spread vegetables in a single layer on the prepared baking sheet.
05 - Roast for 25-30 minutes, stirring halfway through, until vegetables are tender and slightly caramelized at the edges.
06 - Transfer to a serving platter. Sprinkle with fresh cilantro or parsley, toasted pumpkin seeds, and lemon zest. Serve warm.
