Tahini Maple Roasted Root Medley (Printable Version)

01 - 2 medium carrots, peeled and cut into 1-inch chunks
02 - 2 medium parsnips, peeled and cut into 1-inch chunks
03 - 1 small sweet potato, peeled and cut into 1-inch cubes
04 - 1 small beet, peeled and cut into 1-inch chunks
05 - 1 red onion, cut into wedges

06 - 2 tablespoons olive oil
07 - 1 teaspoon kosher salt
08 - ½ teaspoon freshly ground black pepper
09 - 1 teaspoon dried thyme or 1 tablespoon fresh thyme leaves

→ Tahini Maple Dressing

10 - 3 tablespoons tahini (sesame paste)
11 - 2 tablespoons pure maple syrup
12 - 1 tablespoon lemon juice
13 - 1 small garlic clove, finely grated
14 - 2–3 tablespoons warm water
15 - Pinch of salt

→ Garnish

16 - 2 tablespoons fresh parsley, chopped
17 - 1 tablespoon toasted sesame seeds (optional)

# How to Make It:

01 - Preheat oven to 425°F. Line a large baking sheet with parchment paper.
02 - In a large bowl, combine carrots, parsnips, sweet potato, beet, and red onion. Drizzle with olive oil, sprinkle with salt, pepper, and thyme. Toss to coat evenly.
03 - Spread vegetables in a single layer on the prepared baking sheet. Roast for 35–40 minutes, tossing once halfway, until tender and caramelized at the edges.
04 - Whisk together tahini, maple syrup, lemon juice, grated garlic, and a pinch of salt in a small bowl. Gradually add warm water until the dressing is smooth and pourable.
05 - Transfer roasted vegetables to a serving platter. Drizzle with tahini maple dressing and gently toss to coat. Garnish with fresh parsley and toasted sesame seeds before serving.
