01 - In a medium bowl, whisk together the coconut milk, almond milk, chia seeds, maple syrup, vanilla extract, and salt until well combined.
02 - Cover and refrigerate for at least 2 hours or overnight, stirring once after 30 minutes to prevent clumping. The mixture should thicken to a pudding-like consistency.
03 - Spoon a layer of chia pudding into the bottom of 4 glasses or jars.
04 - Add a layer of fresh berries over the chia pudding.
05 - Sprinkle granola and shredded coconut over the berries.
06 - Repeat layers as desired, finishing with fresh berries and a drizzle of maple syrup if preferred. Serve immediately or keep chilled until ready to enjoy.
