03 - Arrange the carrots in a single layer on the prepared baking sheet.
04 - Roast for 25–30 minutes, turning once halfway, until the carrots are golden, fragrant, and tender.
05 - In a small bowl, whisk together Greek yogurt, lemon juice, olive oil, garlic, and a pinch of salt until smooth.
06 - Transfer the roasted carrots to a serving platter. Drizzle with the yogurt sauce. Garnish with chopped herbs, toasted sesame seeds, and a sprinkle of extra zaatar. Serve warm or at room temperature.
