01 - Preheat oven to 400°F. Line a baking sheet with parchment paper.
02 - Pat chickpeas very dry with paper towels. Remove any loose skins for extra crispiness.
03 - In a large bowl, combine chickpeas with olive oil, minced garlic, smoked paprika, sea salt, and black pepper. Toss until evenly coated.
04 - Spread chickpeas in a single layer on the prepared baking sheet.
05 - Roast for 25 to 30 minutes, shaking the pan or stirring halfway through, until chickpeas are golden brown and crispy.
06 - Remove from oven. Drizzle immediately with sesame oil and sprinkle with sesame seeds. Toss to coat evenly.
07 - Let cool for at least 10 minutes. Chickpeas will crisp up further as they cool. Garnish with chopped parsley or cilantro if desired. Serve as a snack or salad topping.
