# How to Make It:

01 - Preheat the oven to 400°F.
02 - Place beet wedges on a parchment-lined baking sheet. Drizzle with 1 tablespoon olive oil, season with salt and pepper, and toss to coat. Roast for 30–35 minutes, turning once, until tender and caramelized.
03 - Rinse farro, quinoa, or brown rice. In a saucepan, combine with water or broth, bring to a boil, then reduce heat and simmer until tender (farro: 25 min; quinoa: 15 min; brown rice: 35 min). Drain any excess liquid and fluff with a fork.
04 - In a small bowl, whisk together olive oil, lemon juice, orange juice, honey or maple syrup, Dijon mustard, salt, and pepper until emulsified.
05 - In a large bowl, combine cooked grains, roasted beets, orange and grapefruit segments, spinach or arugula, and red onion. Drizzle with dressing and toss gently.
